I tucked the last present under the tree. I carefully slipped the last sweet into the last stocking. And I said a silent prayer.

Thank you for this Christmas. And please let us sleep in until at least 6 am.

Last Christmas, I heard little thuds land on the floor down the hall. Excited whispers exchanged, and everyone awoke – it’s Christmas! It was also 4:30 in the morning. My one hope for this holiday was for my children to stay snuggled in their beds with visions of sugar plums in their heads until a more palatable hour.

I got my wish.

Our Christmas morning started closer to the six o’clock hour, and it will definitely be one I will remember for years to come. At 8 (nearly 9!) and 6, my children are at their holiday prime, ripe in their love for Christmas. The excitement, the gratefulness, the torn paper on the floor, I wanted to soak it all in.

While these holiday mornings with the family are blissfully leisurely, I am finding myself not wanting to miss a single minute. Rather than lingering over a stove, I crave breakfasts that are simple but warm and substantial. Baked Eggs fits the bill. You can keep it simple for the family members who prefer their eggs unadorned, and gussy it up for those who want more flavor. Add herbs, sauteed mushrooms, cheese, or ham. Let your imagination run wild. Prepare the trimmings the night before so that all you have to do is drop an egg in the ramekins and return to spending those precious moments with the ones who matter the most this time of year.

Baked Eggs

Ingredients

eggs
butter for ramekins
kosher salt and pepper, to taste
{options to dress up the eggs}
cheese
ham
sauteed mushrooms
chives
scallions
salsa

Instructions

Crack one or two eggs into buttered ramekins, with fillings, if desired. Season to taste with salt and pepper.

Oven: Bake in a preheated 350° oven for about 10 minutes. If you like, bake the ramekins in a baking tray filled halfway with water. The white should be set and the yolk runny.
Broiler: Broil in a preheated broiler for about 6-8 minutes.

Take care not to overcook, it is easy to do! When you remove the eggs from the oven, they will continue to cook as they sit. Serve immediately, with a good helping of warm, crusty bread.
