Two posts ago, I mentioned my involvement with two charity projects focused on the relief efforts in Japan. With every passing day, the reality of the devastation in Japan sinks in with every news development, every image, every statistic. The concept of rebuilding and healing is daunting, but I always have hope. Today, I wanted to tell you more about the second project.

Peko Peko Charity CookbookI am honored to be part of The Peko Peko Charity Cookbook for Japan, an effort that was the brainchild of Stacie Billis of One Hungry Mama, partnered with Rachael Hutchings of La Fuji Mama and Marc Matsumoto of No Recipes. The Peko Peko Cookbook is a collection of nearly 50 family friendly recipes from inspiring food bloggers and cookbook authors, and when it is released, 100% of the profits will directly benefit efforts in Japan.

Today, my Pork & Shiitake Mushroom Gyoza is in the Recipe Spotlight – check it out for a glimpse! The recipe comes from my mother’s binder, and shares how I transform the ball of dough above into homemade gyoza wrappers. It is just one of many delicious recipes to cook, and in the coming weeks, there will be more sneak peaks of all the tasty recipes that will be featured in the cookbook.

I hope you consider supporting this extremely worthy cause; please follow Peko Peko on Facebook and Twitter for updates and release information.

And don’t forget, The International Food Bloggers Auction for Japan is still underway, and will be live until April 10, 2011. I hope you consider bidding on my contribution!

I don’t know if I told you, but I have lost Platanos, Mangoes and Me! and its somewhere in cyberspace and we cannot get it back. 14 months of work and all my followers. Joan from Foodalogue has been hard at work trying to recover, but no luck. I will have to start a new blog and when I do, I will contact you. Please note that I did bid on you and keep my e-mail with you just in case if my bid is accepted, we can make arrangements for transfer.
