Fresh Spring Rolls with Spicy Carrot Sauce

Does anyone else find farmers markets in the summer both captivating and annoying? Hear me out — I love, love, love, our farmers markets: the abundance of freshness and perfect ripeness in every stall, the bites of rarity, those special finds. But you see, that’s just the problem. I simply want to buy it all. And eat it all. Each and every delicious find.

I know at least one person who shares my enthusiasm for the season’s bounty of freshness. I’m sure you remember Amanda of The Cilantropist, whose stunning guest post for me back in June featured the most beautiful zucchini. Her Zucchini Noodles with Chicken and Spicy Peanut Sauce is the kind of food I enjoy most in the summer – clean, fresh, and with a little bit of kick. So when she asked me to write a guest post for her as she powers through a very busy August, I knew exactly what I would make. If anyone would appreciate seasonal vegetables with zippy flavors, Amanda certainly would.

Don’t get the wrong idea, my veggie loving friend is no rabbit. Maybe the reason I find Amanda a kindred spirit when it comes to food is because she can also appreciate the sinfully rich and positively gooey. She doesn’t shy away from the power of bacon. Or a good strong drink to welcome the weekend. It’s all about balance, my friends.

And she captures it all so beautifully.

So while Amanda is getting through her dissertation defense preparation, I am very honored to share a recipe for Fresh Spring Rolls with Spicy Carrot Sauce.  These Vietnamese-style rolls are cool and crunchy, featuring fresh ingredients such as pea shoots, carrots, and vibrant herbs.     Beautiful spring rolls. Love the delicate rice wrapper. And love the carrot sauce. I’ve always had these with peanut sauce but the spicy carrot sauce makes so much sense. And the color’s so much more vibrant, too! Have a wonderful weekend, Liren!

Love these summer spring rolls I made some Vietnamese ones recently but never got around to post them. You are such a good friend doing it for Amanda and I absolutely get what you are saying about farmers markets. I too buy anything in sight as everything is so appealingly fresh. Way too much.     OH how you make us look ever so awesome. I made this for a lite dinner presentation and the compliments were raving. I printed off details, recipes and ideas exactly as stated here for my female guests as they were almost denying the fact I done this all by my little self. It could not have been any better, otherwise it would have been an exquisite dream. The spicy carrot sauce, which I had never made or eaten before even made me awe…. Thank you again.     These look and sound fabulous and couldn’t agree more with Sylvie…such a beautiful presentation.

    I find our farmer’s market an enigma in other ways. The rent for booths is so high, there is seldom the real farmer there. Even when in season the veggies have been brought in from somewhere else! There are more chi chi little shops than real farmers at the farmers market. Sob.
