“We should meet for coffee!” How many times have you been part of this conversation? Yes, a simple cup of coffee, to catch up with a good friend. Then you look at your calendar. With all its nifty color coding and organization, you struggle to find a good time. Ah, and there’s the qualifying word: ‘good.’ Is there ever a good time? No. But is there time? Probably yes. I’m guilty of not making enough time. I admit it.

It’s easy to get swept into this “busy-ness” we all seem to be happily burdened with, but the truth is, it is when I make the time for that cup of coffee that I feel content. So why don’t we do it more?

Maybe because it became a bigger deal than it is. We had to go somewhere, meet at Starbucks. What happened to stopping by a friend’s house and being invited in for a cup of coffee?

I’m crossing a threshold today. The big 4-0. Yes. And I’ve decided the biggest gift I could give myself is time spent with people I care about – that includes you. That includes the people I see day to day. That includes the people I have been wanting to see but couldn’t find a good time. Even if the house isn’t spotless. Let’s start with a tall glass of Homemade Thai Iced Coffee. It is simple enough to make at home, and leave us plenty of time to catch up.

How to Make Homemade Thai Iced Coffee

Thai Iced Coffee is an easy recipe that starts with freshly ground coffee beans. I use French roast coffee and grind it (coarse) before placing the grounds into a French press. The grounds are then covered with boiling water and left to steep for a few minutes. After pressing, the filtered coffee is poured into glasses and topped with condensed milk and ice.

Homemade Thai Iced Coffee

This recipe for Homemade Thai Iced Coffee is simple enough to make at home. It’s quick to prepare and sweetened lightly with low-fat condensed milk.

Ingredients

  • 1 ounce dark French roast coffee coarsely ground (use the richest you can find)
  • 2 cups boiling water
  • 2-3 tablespoons low-fat condensed milk
  • 1 cup ice cubes*

Instructions

  • Grind coffee beans in a coffee grinder. Measure out 1 oz (about 4 heaping tablespoons) and place in French press. Cover with boiling water and let it steep for 4-5 minutes. Press, then pour the filtered coffee into two glasses, leaving room at the top for condensed milk and ice.
  • Stir in the condensed milk, then fill the glass with coffee ice cubes. Enjoy!

Notes

* I like to make coffee ice cubes by pouring any extra brewed coffee into ice cube trays. Using coffee ice cubes helps to keep your iced coffee nice and strong, rather than diluting it with regular ice.

    Despite the fact my website sells tea and matches tea with food—like food with wine—-I am from the Pacific NW. We love love love our coffee. I drink this same iced coffee often. It is very refreshing.
