Five Little Things

Five Little Things I loved the week of June 19, 2020: celebrating birthdays, fun dads, dancing, and more!

A pear salad is one of the Five Little Things I loved the week of June 19, 2020.
Five Little Things

Friday has arrived! How are you today? I’ve been looking forward to this weekend, there’s so much to celebrate…birthdays, dads, and of course, all the little things.

Here are Five Little Things I loved this week:

1. Birthdays

I’m grateful to be celebrating another birthday this week! If you’re a fellow June baby, I send my biggest birthday wishes to you!

2. Salads

With temperatures rising, I’m all about cool and refreshing salads! I shared this Pear and Burrata salad on Instagram a few weeks ago, and realized I never shared it here with you. It’s such a simple recipe, but until I write the post, you can find the recipe in the caption below:

AD: Pear & Burrata Salad! When there's a bowl of ripe pears on the counter they usually don't last long at my house – they're the perfect mid-day snack and my kids just gobble them up! Fresh and naturally sweet, they're packed with fiber (did you know there's 6g per medium pear?) which makes you feel fuller longer! But I managed to set some aside to make this utterly delicious salad with @USAPears ⁣⠀⁣ ⁣⠀⁣ It doesn't get any simpler! I sliced the Anjou pears, skin and all — most of the fiber and antioxidants in pears are found in their skin — and placed them on a bed of spicy baby arugula with dollops of the creamiest burrata cheese. If you can't find burrata (I know it's tricky finding ingredients while we shelter in place), substitute with mozzarella! A simple vinaigrette is all you need to bring it all together to serve with dinner! ⁣⠀⁣ ⁣⠀⁣ If you haven't tried pears and burrata together, you MUST try this salad! ⁣⠀⁣ ⁣⠀⁣ Pear & Burrata Salad ⁣⠀⁣ Serves 4-6 ⁣⠀⁣ ⁣⠀⁣ 4 cups baby arugula ⁣⠀⁣ 2 Anjou pears, thinly sliced ⁣⠀⁣ 8 oz burrata cheese (4 mini) ⁣⠀⁣ 1/3 cup extra-virgin olive oil ⁣⠀⁣ 1/4 cup red onion, finely minced ⁣⠀⁣ 3 tablespoons white balsamic vinegar ⁣ 2 teaspoons stone ground mustard ⁣⠀⁣ kosher salt ⁣⠀⁣ freshly ground black pepper ⁣⠀⁣ 1/4 cup crushed candied walnuts ⁣⠀⁣ ⁣⠀⁣ 🍐 Arrange the arugula on a serving platter. Top with the pears and burrata cheese. ⁣⠀⁣ 🍐In a small bowl, whisk together the olive oil, onion, vinegar, and mustard. Season to taste with salt and pepper. ⁣⠀⁣ 🍐Drizzle some dressing over the salad and garnish with candied walnuts. ⁣⠀⁣ 🍐Serve immediately with additional dressing on the side. ⁣⠀⁣ ⁣⠀⁣ #kitchenconfidante #pear #pears #feedfeed #easyrecipe #saladrecipe #summersalads #summersalad #pearsalad #healthyeats #fitfoodrecipes #eathealthyfood #wholesomefood #behealthybehappy #nutritionfirst #nutritionmatters #nourishingfood #makesmewhole #eatwellbewell

3. Dads that Drum Up Fun

I’m thinking of all the dads this Father’s Day, and the ones who always drum up fun!

And who are always cheering for (or in this case with) the kids!

4. Ballet Shoes

One of my favorite birthday memories is watching the ballet at Ravinia in Chicago — it still stands out to me as a peaceful way to spend a summer evening in the woodsy outdoors, watching a beautiful performance. I just loved this piece on ballet shoes, and wonder if I would have kept up with ballet as a little girl if I had shoes that matched me!

5. Dancing Dads

Speaking of dancing…and dads…how cute is Mario Lopez’s adorable family?

Keep dancing, and have a great weekend!
