Happy weekend! And happy fall! I’m slowly getting used to the idea of the seasons changing, how about you? Opening my first cans of pumpkin and baking has really helped, since here in California, we’re a little bit behind on the chilly weather. So until I start wearing cozy sweaters, I’ll just experience fall with food!

Here are Five Little Things I loved this week:

1. Chocolate

Chocolate or vanilla? It’s definitely chocolate for me, and I’ve been indulging lately. I shared my Chocolate Pumpkin Whoopie Pie recipe yesterday (with both an easy boxed and from-scratch versions) and these luscious Ginger Chocolate Coconut Puddings!

AD Ginger Chocolate Coconut Pudding 🥥 🍫 The only thing better than dipping your spoon into silky chocolate pudding is when it has a tropical twist! To make this decadent treat, I #cookwithkame and made it extra rich and creamy with @kame_brand coconut milk, a splash of rice wine (surprise!), and crystalized candied ginger. The coconut gives the pudding a hint of tropical vibes, the rice wine gives a depth of flavor, and little slivers of candied ginger brightens it up with a little extra zing! Definitely check out they noodles, sauces, condiments, and oil, and visit http://www.kame.com/ to find KA-ME near you!⠀⁣ ⠀⁣ And if you have 10 minutes, whip up some pudding!⠀⁣ ⠀⁣ Ginger Chocolate Coconut Pudding⠀⁣ ⠀⁣ Serves 4⠀⁣ ⠀⁣ 1/4 cup sugar⠀⁣ 1/4 cup unsweetened cocoa powder⠀⁣ 3 tablespoons cornstarch⠀⁣ 1/8 teaspoon salt⠀⁣ 1 13.5 oz can KA-ME lite coconut milk⠀⁣ 1/2 teaspoon KA-ME rice cooking wine⠀⁣ 1/4 teaspoon coconut extract (or vanilla extract)⠀⁣ 2 oz chopped semisweet chocolate or chocolate chips⠀⁣ 2 pieces KA-ME Sliced crystalized ginger, thinly sliced in strips⠀⁣ Whipped cream, for garnish⠀⁣ ⠀⁣ Sift sugar, cocoa, cornstarch, and salt in a medium sauce pan, and whisk until blended. Whisk in the coconut milk and cook over medium-low heat, continually whisking, until the pudding starts to thicken, about 5 minutes. Remove from heat and stir in wine, coconut extract, and chopped chocolate.⠀⁣ ⠀⁣ Pour into 4 ramekins, let cool. Cover with plastic wrap, allowing the plastic wrap to make contact with the pudding to prevent a skin from forming, and refrigerate chilled, 1 hour.⠀⁣ ⠀⁣ To serve, garnish with whipped cream and slivers of sliced crystalized ginger.
