Hi everyone. How are you this week? I honestly feel like the last few days have flown by – one blink and it’s Friday. Hopefully the weekend will last a little longer than a blink…one can hope!

Here are Five Little Things I loved this week:

1. Lumpia in a Bowl

There are certain things that remind me of my mom, and her lumpia (Filipino egg rolls) are one of them. I loved making her version into what is called lumpiang hubad (literally translated to “naked lumpia”) which is essentially all the good filling, in a bowl. I shared it recently on Instagram in a post sponsored by Filippo Berio, but I’ve been getting requests to share the recipe here on the blog as well, so stay tuned for that! When I was a little girl, one of the ways my mom could get us to eat our veggies was by stuffing them in her egg rolls (lumpia)! These days, I’ve been taking a shortcut with her recipe and serving them up in Filipino Egg Roll Bowls made with @filippoberio_us #FilippoberioPartner ⁣ ⁣ For my quick-version, I sauté the veggie-forward filling in Filippo Berio Organic Extra Virgin Olive Oil, which I love for its fresh, herbaceous flavor! It cooks in minutes like a simple stir-fry, and is delicious served over a bowl of rice and drizzled with garlic vinegar dressing – using Filippo Berio White Wine Vinegar to make the dressing. ⁣ ⁣ I know my mom would approve! #FilippoBerioLove ⁣ ⁣ Filipino Egg Roll in a Bowl (Lumpia Bowl) ⁣ Serves 4 ⁣ ⁣ For the Lumpia Bowl ⁣ 2 tablespoons Filippo Berio Organic Extra Virgin Olive Oil ⁣ 1/2 cup onion, minced ⁣ 2 cloves garlic, minced ⁣ 1 lb lean ground beef ⁣ 1 1/2 cups sweet potato, sliced in 1-inch slivers ⁣ 1/2 cup carrots, shredded ⁣ 1 cup bean sprouts ⁣ 2 cups chopped cabbage ⁣ 1 cup Green beans, chopped in 1-inch pieces ⁣ 2 1/2 teaspoons fish sauce, divided ⁣ Freshly ground black pepper ⁣ Cooked white or brown rice ⁣ ⁣ For the Garlic Vinegar Dressing: ⁣ 2 cloves garlic, minced ⁣ 2 tablespoons Filippo Berio White Wine Vinegar ⁣ Freshly ground black pepper ⁣ ⁣ Heat the olive oil in a deep-sided skillet over medium-low heat. Cook the onions until transparent, then add the garlic, cooking for 30 seconds longer. Add the ground beef and 1 teaspoon of fish sauce, and cook until the beef is no longer pink. Stir in the sweet potato and cook until the sweet potato is just starting to soften. ⁣ ⁣ Add the carrots, bean sprouts and cabbage to the pan. Cook until the cabbage wilts, about 4 minutes. Stir in the green beans, season with remaining fish sauce and pepper, to taste. Give it a little drizzle of olive oil to finish. ⁣ ⁣ Make the dressing by stirring the garlic, vinegar, and pepper in a small bowl. 2. Pain Doughlorian

Who’s excited for the new season of the Mandalorian? My kids and I are counting down, and apparently, so is One House Bakery — a small bakery here in the Bay Area, in the cute town of Benicia. They have created, from scratch, a Pain-dough-lorian, baby dough-da and the “pandroid!”

 

3. Thoughts on Emily

Have you watched Emily in Paris on Netflix? I found it wildly entertaining, though at times extremely frustrating with its stereotypes and inaccuracies, not to mention how Emily embodied some of the worst qualities that I have noticed from fellow Americans in France. That said, it gave me the taste of France that I so very much miss, and fed my wanderlust during this time. I also love hearing what others think, especially those who live in, or are from Paris! Here are some of channels I follow that do just that.

4. The Beauty of Everyday People

5. Father Figure

Just when you might think there’s a lot of nonsense on YouTube, you encounter someone who has become a father figure to his over 2 million subsribers on his channel, “Dad, How Do I?” Check out his channel for “dadvice!”
