Summers used to be blissfully long when I was a little girl growing up in New York. At least it felt that way — the hot days were never-ending. I would fill the time with hours in the garden with a good book, playing with cousins in homemade forts, running through sprinklers with neighbors, and loads of re-runs on tv. Sprinkled in between would be the snacks – icy cold, preferred, to cool us off between activities.

Trips to the ice cream shop, walks to the corner store for Italian ices, and the ice cream truck brings back so many summer memories for me! But there’s one more that stands out: when my aunt would sleep over.

Tita Leah (who would later teach me to cook so many favorite dishes) would somehow produce a perfectly ripe avocado from seemingly nowhere. She taught me to love avocados in the way that it is beloved in the Philippines and many Southeast Asian countries: cool, creamy, and sweet. She would make avocado milk smoothies for us! I loved sipping on it and felt especially rewarded when there were some chunks of avocado between slurps!

Growing up on her avocado milk gave me an appreciation for avocados as a sweet treat, and I thought of her when temperatures soared into the 90’s the other day. Avocado popsicles were in order!

Avocado Popsicles Recipe

This summer, I am excited to partner with Calavo, a family of growers based in Southern California. They sent me a box of beautiful avocados, ripe and ready for all my favorite summer snacks and meals!

I’ve enjoyed them in Grilled Fish Tacos with Avocado-Cilantro Sauce and Avocado Cucumber Salad, but I have been especially loving them in these cool and creamy avocado popsicles.

I took inspiration from my aunt’s avocado milk recipe. I made the popsicles with coconut cream for extra creaminess and for that lovely coconut flavor that pairs so well with sweet avocado.

It’s simply made in the blender, along with some almond milk and coconut condensed milk, making this treat dairy-free and vegan! Of course, if you prefer dairy, this can also be made with regular condensed milk!

Blend, freeze, and enjoy! It’s as simple as summer should be!

Ingredients

  • 2 ripe avocados seeded and peeled
  • 3/4 cup coconut cream
  • 1/4 cup almond milk
  • 7 ounces coconut condensed milk
  • 1/4 cup unsweetened coconut flakes optional

Instructions

  • Place the avocado, coconut cream, almond milk, and coconut condensed milk in the jar of a blender. Blend until smooth.
  • Pour the mixture into popsicle molds. If using, sprinkle with coconut flakes before inserting the popsicle sticks. Freeze for at least 6 hours or overnight until firm.
  • Release the popsicles from the molds by dipping the molds into warm water to loosen the pops. Enjoy!
