Who remembers the old Klondike Bar commercials? The one where the soul in search of a frosty treat would open the freezer door, and a swirling snowstorm would emerge, leaving them covered in frost…and a delicious treat in hand? My refrigerator was not too different growing up; the freezer door would reveal swirls of cold smoke, swirling around you until closed the arctic chill behind.

Things sure have changed. My freezer these days opens without much drama, there is certainly no swirling snow storm or even a strong blast it seems. But there is one thing that is similar. Inside, there are treats. Popsicles.

My mom used to make homemade ice pops. I would help myself to them, sucking all the juice until I was left with a pure white popsicle, devoid of flavor. Then I would eat the ice, chomping the crystals. Please tell me I’m not the only one!

I made these Cantaloupe Lime Popsicles to surprise my kids with one of their favorite summer fruits, in frozen pop form. My freezer may not house an arctic storm, but this icy treat will help you cool off on those days you wish you were in one. 

Cantaloupe Lime Popsicles

The popsicles are made by first simmering and cooling a simple syrup (just sugar and water). Then, cubes of cantaloupe (here’s how to pick a perfect cantaloupe), lime juice, and the simple syrup are blended until smooth.

You can adjust the sweetness of the popsicles to your liking (adding more or less of the simple syrup), but remember that they will taste less sweet once frozen.

The popsicles will take around six hours or so to freeze, so be sure to prepare them in advance of when you want to snack on this fresh treat!

Cantaloupe Lime Popsicles

Ingredients

Simple Syrup:

  • 1/2 cup water
  • 1/2 cup sugar

Popsicles:

  • 1 ripe cantaloupe seeded, peeled, and cubed
  • Juice of half a lime
  • 1/4 cup (or more) simple syrup, to taste

Instructions

Simple Syrup:

  • Combine the water and sugar in a small sauce pan. Bring to a simmer. Once the sugar is dissolved, remove from heat and cool.

Popsicles:

  • In a blender, combine cantaloupe, lime juice, and simple syrup, to taste. Err on the side of sweetness as when the popsicles freeze, the sweetness diminishes. Blend until smooth.
  • Strain the mixture and pour into your popsicle molds, leaving about 1/2 an inch from the top of the molds. Cover and place in the freezer. Meanwhile, soak wooden popsicle sticks in warm water (this will help prevent them from floating when you insert them). After two hours of freezing time, insert the sticks in the slushy popsicles. Continue to freeze for four hours or longer, until completely frozen.
  • Rinse the molds for 30-60 seconds under running hot water to loosen the popsicles. Un-mold and enjoy!
