We all have our go-to’s when things get busy, or complicated, or when time is just not cooperating. I’m guessing that the holidays might be serving up more of these busy days than usual, at least it is for me. So when things get a little bit hectic, I turn to simple frittatas, and this particular one has been a favorite of mine lately. You can ask my family, I’ve made it so many times in the last couple of months!

I originally created this recipe for an Instagram video I made in partnership with my friends from Tillamook. I’ve always loved their cheeses, and fell even more in love with them after I visited them in Oregon a few years ago. Their newest farmstyle shredded cheeses have now earned a spot in my refrigerator, simply because it’s so convenient for easy meals like this!

I made this Chicken Sausage and Four Cheese Frittata again this morning, and while it’s an easy lunch for me, I’m saving the leftovers for an even simpler breakfast for the kids tomorrow morning! Whether you make it to fuel up for the day, or as a quick weeknight meal, there’s no wrong time to enjoy a frittata, especially when it’s super cheesy! Cheesy in a good way, of course!

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup yellow onion finely chopped
  • 6 oz chicken sausage sliced
  • 1 cup kale chopped
  • 6 large eggs
  • 2 tablespoons milk
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 1/2 cup grated cheese divided

Instructions

  • Preheat the oven to 400° F and place an oven rack in the center of the oven.
  • Heat a 10-inch skillet (cast iron or non stick works best) over medium heat. Add the oil and twirl the pan to evenly coat, making sure to coat the sides of the skillet. Add the onions, and cook for about 3 minutes, or until they wilt and are transparent. Stir in the sausage and cook for another two minutes, followed by the kale.
  • Quickly whisk together the eggs, milk, salt, and pepper, and pour the eggs into the skillet. Using a spatula, move the edges of the eggs towards the center of the pan, stirring around the curds as they form.
  • Gently stir in the cheese.
  • Place in the oven to bake for about 10-15 minutes, or until the frittata is lofty and the center is no longer runny when you insert a knife.
  • Remove from the oven, let it stand for a few minutes before slicing and serving.
