Coconut Water Sorbet Floats
For the Coconut Water Simple Syrup:
- 1 cup sugar
- 1 cup ZICO Natural Coconut Water
For the Coconut Water Sorbet:
- 1 16.9oz bottle ZICO Natural Coconut Water
- 1 cup coconut water simple syrup (to taste)
- 8 oz shredded coconut meat (fresh or frozen)
For the Coconut Water Sorbet Floats
- 4 small scoops coconut water sorbet
- Your favorite sparkling wine or sparkling juice
Make the Coconut Water Simple Syrup:
Combine coconut water and sugar in a saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer until sugar dissolves, about 3-4 minutes. Cool completely. The simple syrup can be done in advance and stored in the refrigerator until ready to use.
Make the Coconut Water Sorbet:
Put coconut water, 1 cup coconut water simple syrup (more or less to taste) and young coconut meat in a blender. Blend and chill for at least an hour. The sorbet mixture can be made up 24 hours in advance.
After chilling, the sorbet mixture will likely separate. Give it a quick blend, either in a blender or with a whisk. Place sorbet mixture into an ice cream maker and churn for 20 to 30 minutes. Store in an airtight container in the freezer.
Make the Coconut Water Sorbet Floats:
Use an ice cream scoop to place 2-3 scoops of sorbet in each glass. Pour in your favorite sparkling beverage. Serve immediately.
