Everyone is a little extra sleepy this morning. We can blame the clock-fiddling-time-change nonsense. Even the pets seem to be feeling the burden — Bruno is fast asleep on his bed, and little Mochi has climbed into my headphone case (or at least half of her body — try as she may, she can no longer fit into every box and container she climbs into these days) and dreaming little cat dreams.

If you are a food blogger, chances are that despite the need for extra coffee, you’re rejoicing inside — more daylight is in our future! Even my little guy has noticed the longer days and how I’m able to shoot food at 5:30 in the afternoon!

But even if you don’t need natural light to photograph, I’m guessing that you welcome the change as well — there’s something happier about having more hours of sun in the day, and spring feels like it’s palpable.

All this sun means that grilling season is upon us, and I’ve been obsessed with grilled romaine salads lately. Crisp, crunchy romaine is delicious as is, but there is something special that happens when you give it a little char — it brings out a smokey flavor that adds a layer of flavor to an otherwise simple salad. But to take it a step further, I thought I’d pair it with my Avocado Buttermilk Green Goddess Dressing.

Scoop out some avocados, drizzle with some grilled lemon, and top with your favorite toppings, and you have a simple salad that you will love, perfect for these longer days!

Grilled Romaine Green Goddess Salad

Serve 4 | Prep: 10 minutes | Cook: 20 minutes

Grilled Romaine Green Goddess Salad feels like springtime on a plate! The smokey char of romaine lettuce works so well with a lightened up green goddess dressing.

Ingredients

  • 2 romaine heads, washed and halved
  • 1 lemon, halved
  • 3 tablespoons olive oil
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 avocado, pitted, peeled and sliced
  • 4 tablespoons crumbled feta cheese
  • Avocado Buttermilk Green Goddess Dressing (recipe here)

Additional toppings, such as:

  • sunflower seeds
  • crispy chickpeas
  • sliced red onion
  • sliced radishes
  • sprouts

Instructions

  1. Heat a grill pan or your grill on high heat.
  2. Pat the halves of romaine lettuce dry with a clean towel. Brush the cut sides of lettuce with olive oil and sprinkle with salt and pepper. Do the same for the lemon.
  3. Place the romaine and lemon halves cut side down on the grill for about 5 minutes, or until charred.
  4. Arrange the romaine and lemon on a platter, along with avocado, feta and favorite toppings.
  5. Drizzle with Avocado Buttermilk Green Goddess Dressing and season to taste with salt and pepper.
  6. Serve immediately.
