Avocados were a rare treasure when I was a little girl growing up in New York City. I often encountered them mashed, whether in the guacamole at a restaurant or when my aunt would make what we called avocado milk. It probably wasn’t until I moved to California that I bought my first avocado. Fast forward twenty years, and now, I can’t go a day without a little creamy avocado in my life.

I still make avocado milk, but now I add avocados to almost everything! And sometimes, I find myself in the fortunate situation of having too many avocados, but really, is there such a thing? The question becomes: how can I store avocados long-term?

The answer is simple.

Freeze them!

How to Freeze Avocados

If you’ve ever wondered whether or not you can freeze avocados, I’m here to tell you that the answer is yes!

I will admit, there’s nothing better than a perfectly ripe avocado, but as you must know, the window of enjoying an avocado at its perfect ripeness is relatively narrow, so rather than risk wasting them altogether because of the race against time, we can turn to our trusty freezer.

If you’re wondering, “can I freeze whole avocados?” I would advise against it. Due to the water content in the fruit, avocados can get mushy when frozen, so I do not recommend freezing the whole fruit. Honestly, freezing avocados are not ideal when the creaminess is critical, but it is always better to freeze the avocados than let them go to waste.

There are two methods that I prefer when it comes to freezing avocados.

1. Freeze Quartered Avocados

  1. Quarter, seed and peel the avocados.
  2. Lay them on a tray and place it in the freezer for about 30 minutes or until firm.
  3. Transfer to a freezer-safe bag and freeze for up to 4 months.
  4. To use the avocados, take your desired amount and thaw at room temperature for 20-30 minutes. Use immediately after it is defrosted in your desired recipe.

2. Freeze Mashed or Puréed Avocados

  1. Mash the avocados.
  2. Divide the mashed avocado into in an ice cube tray. Freeze until ready to use.
  3. Once frozen, you can transfer the cubes of avocado into freezer-safe bags to save space.
  4. This method is perfect to pop into smoothies or smooth sauces; no defrosting time necessary.

Tips for How to Freeze Avocados

Are frozen avocados just as good as fresh?

Nothing beats a perfectly fresh avocado, so if the recipe requires that perfect, creamy texture, opt for fresh avocado. But this method is excellent if you have excess avocados that you don’t want to waste and are great for smoothies, a simple avocado toast, a sauce such as my Grilled Fish Tacos with Avocado-Cilantro Sauce, or Avocado Pesto Pasta with Chicken Sausage.

Can You Freeze Whole Avocados?

The short answer is no. Since the avocados will take longer to defrost, and the high water content, it will result in a mushy, unattractive avocado if you leave it whole, peel, seed, and all. It really makes a difference if you peel and quarter your avocados before freezing.

How Ripe Should the Avocado Be?

The ideal candidate for freezing would be the avocado that is ripe but still firm, that releases easily from its peel and does not have any brown spots.

How Do I Defrost Avocados?

For quartered frozen avocados, transfer your desired portion to a clean plate and defrost at room temperature for 20-30 minutes.

Mashed frozen avocados are best used in smoothies and sauces and can be used from frozen, with no defrosting necessary.

How Long Do Avocados Keep in the Freezer?

If stored properly, avocados keep in the freezer for approximately four months.

    Store a perfectly ripe avocado submerged in water in the fridge. It will keep that way for about a week. I imagine you could do the same with an unripe avocado to keep it from ripening too fast.
