If You Like Pina Coladas

…then you’ll love a POM-Pina Colada! Kick off your weekend and National Pina Colada Day (ah, bet you didn’t know that today is a holiday) with a frothy, creamy blend of pomegranate juice, fresh pineapples and coconut. And rum. Can’t forget the rum.

For Week 3 of the POM Wonderful Summer Menu Series, I had the most pleasurable task of creating a cocktail. Cocktails are often overlooked in our household, only because of our enthusiasm for and proximity to excellent local wineries. Uncorking a bottle of wine is just so simple and straightforward! But, making this twist on the classic pina colada reminded me of how fun cocktail making can be and unearthed the mixologist in me.

(Love that word, by the way. Mixologist.)

If you’re like me, you may be craving a vacation. Bring the sun and beach to your own backyard with this refreshing POM-Pina Colada. Think of it as a virtual stay-cation. POM-Pina Colada

Serves 4

  • 1 cup POM Wonderful Pomegranate Juice
  • 2 cups fresh pineapple chunks
  • 1 cup good quality light rum (such as Malibu Caribbean Rum or Bacardi Puerto Rican Rum)
  • 3/4 cup cream of coconut (Coco Lopez is the best)
  • 3 cups ice

Place pomegranate juice, pineapple, rum, cream of coconut and ice in a blender. Blend well.

    LOVE!!!!! Sometimes making drinks is more fun than just opening a nice bottle of wine. And love the addition of Pom ;) It really looks like the perfect drink to enjoy on the deck on a nice summer evening.
