Jet lag is beast, my friends. I find that each trip is different — just when I’m convinced that going east is much harder than going west, our trip to the south of France the last few weeks forced me to bite my tongue! Coming home was definitely more challenging, in more ways than one.

Coming home to an empty refrigerator is always tricky, especially when you have tummies in a different time zone and the motivation — or energy — to cook is hardly anywhere to be found. I always make sure to have some pasta in the freezer, but more often than not, I crave soup after a long time away. It doesn’t matter what time of year, or how hot, I think there is something so restorative and nourishing about a bowl of soup that helps you feel more at home again.

This Pressure Cooker Creamy Rotisserie Chicken and Wild Rice Soup is something I’ve been making a lot of in the past couple of months…it all started in the spring when we had rounds of the flu at home (right before our spring trip to France, actually!), and I found myself making it so much at the end of the busy school year when I felt like I had hardly any time to throw dinner together. Any time we had a rotisserie chicken, or leftover roast chicken from a previous dinner, I would make sure to save some, because the kids asked for this creamy chicken and wild rice soup over and over again. They loved it in school lunches, too!

If you have an Instant Pot, or any kind of pressure cooker (I have this one), you’ll find that it will deliver a creamy chicken and wild rice soup in no time at all. It’s perfect for using up a leftover rotisserie chicken, or cleaning out the fridge and throwing in your favorite veggies. If you have a bag of frozen mixed veggies, it’s perfect in here, too! So if you’re going away on a trip, freeze some shredded chicken and you’ll have an easy soup ready to welcome you home.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup corn kernels fresh or frozen
  • 1 cup peas
  • 1 1/2 teaspoons herbes de Provence
  • 1/2 cup wild rice
  • 1/2 cup long grain rice
  • 5 cups chicken stock
  • 2 tablespoons cornstarch
  • 1/2 cup cold water
  • 3 cups shredded chicken, cooked (leftover rotisserie or poached chicken is great here)
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Instructions

  • Heat the Instant Pot or pressure cooker on the saute function. Add the olive oil, onion, garlic, celery, carrots, corn, and peas. Season lightly with a touch of salt and pepper, and cook for about 3 minutes, or until the onions are translucent.
  • Add the herbes de Provence, wild and long grain rice, and stir until the grains of rice are well coated. Stir in the chicken stock.
  • In a small bowl, stir together the cornstarch and cold water until smooth, with no lumps. Add to the soup.
  • Lock in the Instant Pot/pressure cooker lid. Pressure cook on high for about 30 minutes.
  • Depressurize the Instant Pot/pressure cooker. Season the soup with salt and pepper and add the shredded chicken. When the chicken is warmed through, serve immediately.
