Simple Sundays | Soy Lime Marinade

When you meet your partner in life, those initial weeks and months are full of intoxicating moments of early love, tempered with more pragmatic considerations; matters such as family, religion, expectations, and future children all come into play. About 12 years ago, I met my husband, and even back then, I knew he would make a wonderful father. In some ways, I wondered if we could be considered opposites (which really didn’t bother me, because they do say that opposite attract), but as time has proved, I realize that we are more similar than different…it is our strengths that complement one another. My weakness is his strength, and vice versa.

We both have a zest for life, in our own ways. I, as you can imagine, am adventurous with food – I will eat nearly anything, at least once. My husband, while his palate has grown exponentially, certainly holds reservations with the bizarre. He can make sound decisions in mere minutes, I on the other hand, always need to time to consider. I would jump at an opportunity to parachute, he would watch from the ground. He would leap at a chance to experience the expat life anywhere in the world, I would pause and let the comfort of the life we have built here hold me down. He bikes down mountains at neck breaking speeds, I would prefer to climb one.

I love his devotion to our children, the values we share, and the silliness he can still bring to the table. He jokes with them, I shake my head, more out of duty than disapproval, because I know he is being the good cop at that moment, and I need to play the other role.

On this Father’s Day, I celebrate him and all he has done to bring his appetite for life to our family. It’s his qualities I see, mingled with mine, mirrored in our children (for better or for worse!).

We will celebrate simply but deliciously today. There will be good food, and I have something sweet and luscious up my sleeve. There will likely be grilling, too. If you are looking for a zesty marinade to add some oomph to your summer menus, try this Soy Lime Marinade. Pair it with a flank steak, and I’m sure the dads in your life will enjoy it, too.

Soy Lime Marinade

INGREDIENTS
  • 4-5 cloves garlic, crushed
  • 1/2 cup soy sauce
  • 2 limes, juiced
  • zest of one lime
  • 3 tablespoons Worcestershire sauce
  • 8 dashes Tabasco sauce
  • 1-2 tablespoons olive oil
  • 1 tsp freshly ground black pepper
METHOD

Combine ingredients in a small bowl. Use to marinate beef or poultry, ideally overnight.
