As soon as we returned from Maui not too long ago, we (each one of us) plummeted into a whirlwind of activity. My husband’s work and travel schedule was in high gear, both children started a two week drama camp (no better way to nip jet lag in the bud than setting an alarm for camp!), and I immersed myself into an overflowing inbox and deadlines.
But don’t worry, this is not about to become a woe-is-me-we-are-so-busy-boo-hoo-for-us post, because honestly, it felt good to get back in the swing of things. I actually think it may be better that way – there’s no time to wallow in the post vacation blues.
With the whole family diving into busy schedules and days hotter than those we had on vacation, each night, I craved a simple dessert that would bring me back a taste of the tropics. One of the most comforting and universal desserts out there is rice pudding.
It seems to me that no matter what your heritage, most people grew up eating rice pudding, and I know that for me, when my mom made her version, it was a rare but sweet treat. It put a smile on my face when I learned that August 9th is National Rice Pudding Day! Did you know?
This year, I am so pleased to share a Tropical Rice Pudding featuring Kozy Shack® Rice Pudding. We’re big fans of Kozy Shack around here – everyone has their favorites. The boys love the chocolate pudding, my daughter adores the tapioca pudding. And I, well, the rice pudding is for me.
On days when I want a simple yet wholesome dessert, but don’t have the time to stir up a pudding on the stove, I’ll turn to Kozy Shack, knowing it has the simple ingredients I also use: low-fat milk, rice, sugar and eggs.

Tropical Rice Pudding
- 1 1/3 cups Kozy Shack® Rice Pudding (from a 22-oz package)
- 1-2 ripe mangoes peeled, pit removed and diced
- 2-3 ripe kiwis peeled and diced
- 1/3 cup coconut flakes
- In the bottom of 4 serving cups/dishes, place several tablespoons of mango and kiwi. Fill with rice pudding, about 1/3 cup each. Top with the remaining fruit and sprinkle with coconut flakes. Serve immediately.
