Busy Summer Schedules

As soon as we returned from Maui not too long ago, we (each one of us) plummeted into a whirlwind of activity. My husband’s work and travel schedule was in high gear, both children started a two-week drama camp (no better way to nip jet lag in the bud than setting an alarm for camp!), and I immersed myself into an overflowing inbox and deadlines.

But don’t worry, this is not about to become a woe-is-me-we-are-so-busy-boo-hoo-for-us post, because honestly, it felt good to get back in the swing of things. In fact, I think it may be better that way – there’s no time to wallow in the post-vacation blues.

Rice Pudding

With the whole family diving into busy schedules and days hotter than those we had on vacation, each night, I craved a simple dessert that would bring me back a taste of the tropics. One of the most comforting and universal desserts out there is rice pudding.

It seems to me that no matter what your heritage is, most people grew up eating rice pudding. I know that for me, when my mom made her version, it was a rare but sweet treat. It put a smile on my face when I learned that August 9th is National Rice Pudding Day! Did you know?

This year, I am so pleased to share a Tropical Rice Pudding featuring Kozy Shack® Rice Pudding‎. We’re big fans of Kozy Shack around here – everyone has their favorites. The boys love their chocolate pudding, my daughter adores their tapioca pudding. And I, well, their rice pudding is for me.

Tropical Rice Pudding

On days when I want a simple yet wholesome dessert, but don’t have the time to stir up a pudding on the stove, I’ll turn to Kozy Shack. I love knowing that it was made with the simple ingredients I prefer to use: low-fat milk, rice, sugar, and eggs.

Today in honor of our trip to Maui, I decided to add some fun flavors – turning this classic rice pudding into a tropical rice pudding. This is the great thing about a classic – you can play around with flavors and come up with so many great combinations!

This serving of Tropical Rice Pudding is a wonderful way to taste a bit of vacation in each spoonful – sweet mangoes, bright kiwi, and coconut flakes make for a fresh and delicious dessert! It’s simple, it’s elegant, and it’s wholesome – all things I love.

Rice pudding is creamy and delicious! Here it gets a tropical twist with fresh mangoes, brilliant kiwis, and sweet coconut.

Ingredients

  • 1 1/3 cups Kozy Shack® Rice Pudding‎ (from a 22-oz package)
  • 1-2 ripe mangoes peeled, pit removed and diced
  • 2-3 ripe kiwis peeled and diced
  • 1/3 cup coconut flakes

Instructions

  • In the bottom of 4 serving cups/dishes, place several tablespoons of mango and kiwi peices.
  • Fill with rice pudding, about 1/3 cup each.
  • Top with the remaining fruit and sprinkle with coconut flakes. Serve immediately.

    Normally I would pooh pooh store bought rice pudding. However, I am going to assume this tastes as good as a rice pudding I can get at Costco—I forget the brand, may it’s this one—-that is most excellent.
    Good job in repurposing it with the fruit. So SUMMER!

    we LOVE Kozy Shack rice pudding!! in fact, we simply cannot buy it anymore and have it in the house because there is absolutely no restraint! the tropical twist is perfect for this time of year!
