Coconut Banana Bread is banana bread extreme. It’s already rich from all the bananas, but after adding the coconut milk and shredded coconut makes it even better! Spread on the Nutella, and you’ve got the ultimate slice of banana bread.
1cupshredded sweetened coconutplus more for garnish
1 1/2cupssugar
1/2cupunsalted butter(1 stick)
2eggs
1cupcoconut milk
5-6very ripe bananas

Instructions
Preheat the oven to 350°F. Prepare two loaf pans by buttering and lining with parchment paper.
Sift or whisk flour, salt, baking powder, and baking soda. Add coconut, then set aside. In a separate bowl or in the bowl of a stand mixer, cream the sugar and butter.
Mix in eggs, one at a time, then add the bananas. Add dry ingredients and coconut milk, alternating until incorporated, ending with the dry ingredient addition. Be sure not to over mix.
Bake in buttered loaf pans for about 30 minutes or until an inserted toothpick comes out clean. Let it cool slightly before slicing. Serve with Nutella and a sprinkle of extra shredded coconut.
