If you love an everything bagel, you’ll be amazed at Everything Bagel Scones! Much easier to make, these savory scones with everything bagel seasoning are delicious for breakfast or brunch!
In a large bowl, whisk together the flour, sugar, 1 1/2 tablespoons everything bagel seasoning, baking powder, and salt. Using a pastry cutter, cut the cream cheese into the flour mixture, until you have coarse crumbs. This can also be done with two knives or a food processor.
In a small bowl, whisk the eggs lightly and combine with the buttermilk. Add the buttermilk mixture to the flour mixture and stir until just moist.
Gently stir in the parmesan and green onion to the batter; the dough will be sticky.
Dust with flour, as needed, if the dough feels too wet. Divide the dough into two pieces and form two balls of dough.
On a lightly floured surface, roll one ball of dough into a 6-inch circle, about 3/4-inch thick. Cut out 4 wedges. Repeat with the second ball of dough. You should have 8 scones. Place the scones on a baking sheet lined with parchment or a silicone mat, and lightly brush with buttermilk. Sprinkle with sea salt and remaining everything bagel seasoning.
Place the scones in the freezer for 30 minutes. Meanwhile, preheat the oven to 400°F with a rack placed in the center of the oven.
Once the scones are chilled, bake for 20 minutes, or until golden. Serve warm with cream cheese, lox, red onion, and capers, or on its own.
Can I reheat the scones? The scones are best enjoyed warm but will keep, once completely cooled, in an airtight container at room temperature. To reheat, wrap in aluminum foil and place in a 350°F oven for about 10-12 minutes. You can also wrap it up up in a very slightly damp paper towel and heat in the microwave for 20-25 seconds (this is my impatient family's method of choice).
Can I make the scone dough in advance and bake it later? Yes! Simply form and cut the dough, and place in the freezer for 30 minutes, then transfer to an air-tight container and continue freezing until ready to bake. When ready to bake, brush with the buttermilk, sprinkle with salt and everything bagel seasoning, and add an extra minute or two to the total baking time since you will be baking from frozen.
