Instructions
Make the Avocado Chocolate Pudding
Place the avocados, vanilla, cocoa powder, agave nectar, oat milk, salt, and melted chocolate in a blender. Blend until smooth, periodically scraping the sides of the jar with a spatula.
For extra smooth pudding, pass mixture through a sieve into a bowl. Divide the pudding into 4 small cups, cover with plastic wrap, and chill for at least 1 hour, or overnight.
While the pudding chill, prepare the garnishes.
Make the Cookie “Dirt”
Place the chocolate cream cookies in a food processor and pulse until it is fully crumbled, or it resembles a dirt-like consistency.
Make the Cookie “Tombstones”
Melt the chocolate in a small, microwave safe bowl for 30 seconds. Continue microwaving it in 10 to 15 second increments, stirring between each, until the chocolate is fully melted. Place the melted chocolate into a tiny piping bag, or create one by forming a small rectangle of parchment paper into a cone. Cut a tiny tip and pip “RIP” onto the cookies. Let the chocolate decoration harden; this will only take a couple of minutes.
Assemble the Halloween Dirt Cups
Garnish each chilled pudding cup with a sprinkling of cookie “dirt,” tombstone, candies and sprinkles. Enjoy immediately, ore return to the refrigerator until ready to serve.
Notes
Make it Vegan: To make these Halloween Dirt Cups vegan-friendly, substitute the Milano cookies with a vegan sugar cookie or Biscoff cookie.
