Combine the avocados, tomatoes, corn, red onion, cilantro and jalapeño in a bowl.
Add the lime juice, and season to taste with salt and pepper. Gently stir to combine.
Enjoy on its own or as a side to your favorite meal!
Can I make this salad ahead?
Absolutely. This salad can easily be made ahead of time, up to a day before. The lime juice prevents the avocados from browning, but be sure to store in a glass bowl (or some kind of non-reactive bowl) in the refrigerator overnight.
What kind of cooked corn should I use?
This salad is perfect when you already have cooked corn on hand. You can use corn that has been boiled, microwaved, roasted or grilled -- all work well! Grilled corn, in particular, adds a nice, smoky flavor! In a pinch, frozen or canned corn can be used, too.
Can I use raw corn?
Yes! Raw sweet corn, when at its peak, is absolutely delicious and can be used in this salad for extra crunch.
