In a toaster or toaster oven, toast the waffles for approximately 2 to 3 minutes. While the waffles toast, lightly spray a Mason jar or small microwaveable cup with cooking spray. Pack the baby spinach at the bottom and gently crack an egg on top of the bed of spinach. Season with salt and pepper. Lightly cover the jar or cup with plastic wrap and cook in the microwave for approximately 30 to 35 seconds on high (the cooking time will depend on your microwave, as well as how cooked you prefer your yolks).
Transfer the toasted waffles to a plate, and layer one slice with the cheese and slices of avocado. Using a large spoon, remove the egg from the cup and place it on top of the avocado. Top this with the remaining waffle. Serve with hot sauce if desired.
