– Rinse the rice until the water is clear. Soak the rice. – Drain the rice in a sieve and place the sieve over a saucepan of simmering water. Cover and steam the rice.
– While the rice steams, warm the coconut milk and sugar in a small saucepan over low heat until the sugar is fully dissolved. – When the rice is ready, transfer it to a bowl and stir in the sweetened coconut milk. Let it sit.
– Using a large ice cream scoop or a mold, divide the rice. Arrange some mango slices on top or to the side. Drizzle some coconut milk over the rice, and serve with additional sweetened coconut milk and mangoes on the side. Serve warm.
