This creamy Filipino-style spread is easy to make with savory Queso de Bola (or Edam cheese), cheddar cheese, chopped pimento, and good quality mayonnaise! Similar to its cousin, Southern Pimento Cheese, Cheese Pimiento is creamy, slightly tangy, and a beautiful blend of cheese flavor and sweet roasted pimento pepper. My family recipe was a staple for holiday gatherings with family or for merienda (afternoon snack), and served on warm pan de sal or homemade bread.
In a medium bowl, add the pimento and shredded cheeses. Use a handheld electric mixer to combine the pimento and cheese well.
Add the mayonnaise and continue to mix until smooth, or your desired consistency.
Spread on slices of bread and enjoy!

Growing up, my mother would serve this spread on warm pan de sal or toasted homemade bread. During the holidays, she would also use it as a spread on pan de sal, along with salty slivers of ham. But feel free to experiment! Try it on bagels, serve it on a charcuterie board with crackers, spread it on quesadillas, and more!
