Raspberry Peanut Butter Energy Bites - no-bake treats that taste like peanut butter & jelly truffles, but healthy for breakfast, after a workout, or dessert!
In the bowl of a blender or food processor, pulse the oats, cranberries, chocolate chips, peanut butter, maple syrup, and chia seeds until well combined.
Add the raspberries and pulse just a few times until the raspberries are just broken up and incorporated.
Using a small ice cream or cookie scoop, portion out the energy bites and gently roll into balls. Drop in ground oats or shredded coconut.
Place on a parchment lined baking sheet (half sheet size) and freeze for about 1 hour before eating.
Store energy bites in the freezer in an airtight container until ready to enjoy.
