– Preheat the oven with a wire rack placed in the center of the oven. Line a quarter sheet pan with parchment paper and set aside. – Stir the nuts in a medium bowl.
– Add the oil, maple syrup, rosemary, thyme, brown sugar, chipotle pepper, kosher salt, cinnamon, cumin, and cayenne pepper to the nut and stir well to combine.
– Spread on a parchment-lined quarter sheet pan and place in the oven. Roast, stirring occasionally. Keep a close eye on the nuts.
