Just about every week, I head to the local coffee shop, gear in tow, and meet my dear friend, Prerna. We call them our co-working dates, and it’s one of my favorite days of the week. Prerna understands me, because she, too, has been immersed in the world of writing a blog for as long as I have. And while I have followed her on Indian Simmer since the beginning, it wasn’t until not too long ago that she moved closer to my part of the Bay Area, that we first met. Funny how that works! Now that we’re minutes away from each other, I can’t tell you how nice it is to have a coworking partner that I can catch up with while working! While my husband may joke that we gab more than we work — he calls them our playdates, haha — I have to say, our co-working dates are extremely productive.
Right now, Prerna is summering in India, so I was more than pleased when she asked if I would consider writing a guest post for her. I immediately thought of saag paneer, perhaps one of my first loves when it comes to Indian food. I still think about the creamy spinach and morsels of paneer cheese at my favorite midtown restaurant near my old Manhattan office and decided to make it into a naan pizza.
If you’re a bit confused, don’t be. If you’ve ever dipped your naan in saag paneer, then you’ll know why it makes complete sense by the slice. Think of it as an Indian classic with a bit of a New York twist!

Saag Paneer Naan Pizza
Ingredients
- 3 tablespoons olive oil divided
- 1 cardamom pod
- 2 cloves
- 1/2 cup finely diced onions
- 1 tablespoon ginger peeled and grated
- 2 garlic cloves peeled and minced
- 10 ounces fresh spinach washed and chopped
- Kosher salt to taste
- Freshly ground black pepper to taste
- 1 teaspoon cayenne pepper or 1 Thai chile diced
- 6 to 8 ounces paneer cut in 1/2 inch cubes
- 1/3 cup cream or milk
- 1/3 cup ricotta cheese
- 1/4 cup shredded mozzarella cheese
- 2 Naan flatbreads
