One of the first things I learned to appreciate when I moved to California many years ago was the beauty of a simple salad. Mind you, this was years ago when it was much harder to find fresh, tender greens. Growing up in New York and eventually making my way to Chicago, followed by San Francisco, you can imagine that there were so many foods that I expected to love. Avocados come to mind, and wine, of course.

But it was the simple salad that surprised me the most. The small deli near my office in Marin served up tangled messes of fresh greens that needed nothing more than a secret-recipe balsamic vinegar, some pecans, cranberries, and blue cheese. Restaurants in Napa served the most delicate greens lightly dressed with good olive oil and a splash of vinegar. One of our favorite brunch spots in the East Bay has mastered the breakfast salad, allowing the lettuce to shine.

I quickly learned that salads can be simple and delicious when the greens are fresh. Nowadays, it is much easier to access healthy lettuces of all varieties. I’m excited to share this new recipe with you with a simple mayonnaise dressing. And I can’t wait to tell you about the leafy greens!

How to Make Lettuce Salad with Mayonnaise Dressing

Never underestimate a lettuce salad! When ingredients are fresh, simple is best, and it doesn’t get any simpler than this. Add some thinly sliced watermelon radishes for crunch, nutrient-rich avocados for creaminess, and red onion for a flavorful bite!

The mayonnaise dressing blends in seconds in a food processor, but can also be whipped up with a little knife work and a quick whisk. This version of mayonnaise dressing has the freshness of dill, acidity of white wine vinegar, and the umami from a touch of anchovy paste. If you love Caesar dressing or tzatziki sauce, I know you will love this homemade mayonnaise dressing!

How to Make Lettuce Salad with Mayonnaise Dressing

  1. Make the mayonnaise dressing:

    Place the dill, olive oil, vinegar, and anchovy paste in a food processor. Process on high speed to combine. Add the mayonnaise and pulse until the dressing is blended.Making mayonnaise dressing in a food processor.

  2. Toss and serve the salad

    Toss the lettuce with half of the dressing until fully coated. Stir in the avocado, radish, and red onion. Season to taste with salt and pepper. Ingredients

For the dressing

  • 1/4 cup chopped fresh dill plus extra for garnish, if desired
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon anchovy paste
  • 1/2 cup mayonnaise
  • Kosher salt and freshly ground black pepper

For the salad

  • 5 ounces Hippo Harvest Medley or Baby Romaine
  • 1 avocado pitted, peeled, and quartered
  • 3 watermelon radishes peeled and thinly sliced
  • 1/4 cup thinly sliced red onions
  • Kosher salt and freshly ground black pepper

Instructions

Notes

Since this salad celebrates tender lettuce, it really must be enjoyed right away. Make it too far in advance, and the greens will wilt. If you would like to prep this in advance, make the mayonnaise dressing up to two days in advance and store in an airtight container in the refrigerator. Dress the greens right before serving.
