I’m what you might call a coconut water connoisseur. Ever since my first sip while on vacation as a little girl in the Philippines, I have always had a thirst for the refreshing taste of young coconut water, freshly plucked from the tree, and dropped down to the earth below, a few expert thuds of the knife revealing the juice within. There just isn’t anything better, except perhaps, taking a spoon and scraping the meat of the young coconut and slurping it all up.
I drink coconut water on a daily basis, especially after a workout, and love that it is so much easier than even just a few years ago to find coconut water this side of the hemisphere. But, not all coconut water is made equal, and I actually get sad inside when someone confesses to me that they have tried coconut water and did not like it — to me, that means they didn’t try the right one. I’ve tried them all, and each one has its own unique flavor.
Not all coconut water is created equal — so I was excited to work together with ZICO Coconut Water. ZICO is 100% coconut water, with no sugar added and never from concentrate. In fact, of the top three brands in the coconut water category, ZICO is the only one that doesn’t add sugar or other ingredients to its natural (unflavored) coconut water. It’s a little crazy to know that other brands may not be pure coconut water, but I always check the bottle: with food, inside is everything, since you are what you eat!
Sipping on coconut water is enough to make me happy, but I thought it would be fun to make something I could scoop up with a spoon and add a little extra pizzazz to share with someone special.
I whirled up a super simple coconut water sorbet, blending the coconut water with some coconut meat, making an icy treat that is so good – even on its own.
But you know me and bubbly drinks – I had to take it a step further and make Coconut Water Sorbet Floats!
Make it with some sparkling rosė to share with someone special, or your favorite sparkling juice to make it kid-friendly. The only thing left is to say cheers!

Coconut Water Sorbet Floats
A coconut water sorbet gets festive in a sparkling cocktail made with a simple, homemade coconut water sorbet bursting with coconut flavor!
Ingredients
For the Coconut Water Simple Syrup:
- 1 cup sugar
- 1 cup ZICO Natural Coconut Water
For the Coconut Water Sorbet:
- 1 16.9oz bottle ZICO Natural Coconut Water
- 1 cup coconut water simple syrup (to taste)
- 8 oz shredded coconut meat (fresh or frozen)
For the Coconut Water Sorbet Floats
- 4 small scoops coconut water sorbet
- Your favorite sparkling wine or sparkling juice
Instructions
Make the Coconut Water Simple Syrup:
Combine coconut water and sugar in a saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer until sugar dissolves, about 3-4 minutes. Cool completely. The simple syrup can be done in advance and stored in the refrigerator until ready to use.
Make the Coconut Water Sorbet:
Put coconut water, 1 cup coconut water simple syrup (more or less to taste) and young coconut meat in a blender. Blend and chill for at least an hour. The sorbet mixture can be made up 24 hours in advance.
After chilling, the sorbet mixture will likely separate. Give it a quick blend, either in a blender or with a whisk. Place sorbet mixture into an ice cream maker and churn for 20 to 30 minutes. Store in an airtight container in the freezer.
Make the Coconut Water Sorbet Floats:
Use an ice cream scoop to place 2-3 scoops of sorbet in each glass. Pour in your favorite sparkling beverage. Serve immediately.
