As soon as the calendar flipped to January, my daughter lamented that there are no longer any holidays to look forward to, at least until February. Valentine’s Day and even the big game might not be until next month, but perhaps she is wrong.
After all, there are game days all through January, and lots of homes throughout the country will be celebrating each weekend — maybe I can convince her to look forward to that? And if not football, then how about all the game day eats?
You probably know by now that the food is my personal favorite part of game day (not surprising, I’m sure), and while I love all the indulgent treats, I try to lighten things up when I can. One of my favorite ways to do it is with one simple ingredient: hummus!
I received another box of goodies from my friends at Safeway, and this time it was full of ingredients perfect for game day feasts! From popcorn to tortilla chips and various salsas, to a wide variety of Boar’s Head Hummus, both my kids were ready to dive into the box! I love how there are so many possibilities between the Boar’s Head Hummus (savory and sweet!) and Tzatziki, O Organics favorites, and Signature Select items.
My local Safeway carries so many Boar’s Head hummus flavors, you could really use any of them in here. I think Everything Bagel and Sweet Chili and Garlic would be amazing, but I stuck with Traditional so that I could focus on the crunchy add-ins. I love mixing in red onion and celery for crunch, and capers for some zing!

The chicken salad is also delicious with the crackers that were in my box, and with a sprinkling of chili pepper and a dollop of corn salsa!

How to Make Hummus Chicken Salad
I love that this chicken salad recipe is mayo-free — the hummus replaces the mayonnaise and also gives you a boost of protein.
If you have leftover grilled or roasted chicken breast, this is a great way to use it up! And if not, it’s worth the extra 20 minutes to roast some. Simply dice or shred the chicken, mix it with crunchy celery, onion, capers, hives, hummus and lemon juice. Then serve on slider buns and garnish with lettuce!
These sliders may be perfect for game day, but it’s also a simple lunch, picnic treat, or even just a snack!

Hummus Chicken Salad Sliders
Ingredients
For the Chicken Salad
- 1 lb grilled or roasted skinless chicken breasts chopped leftovers are perfect in this
- 1/2 cup hummus
- 1/2 cup diced celery
- 1/4 cup finely chopped red onion
- 14 cup capers
- 1/4 cup chopped chives
- juice of half a lemon
- kosher salt to taste
- freshly ground black pepper to taste
For Serving:
- slider buns
- green leaf lettuce
Instructions
- Finely chop or shred the chicken and place in a bowl.
- Mix in the hummus, celery, red onion, capers, chives, and lemon juice. Season to taste with salt and pepper.
- Serve on slider buns garnished with lettuce.
