Oh no. I’m all about cooking once, eating twice. Or trying to, at least.

If you’re like me, having extra pulled pork is the best thing ever – the possibilities are endless! And if you’re craving a healthy snack or looking for a delicious bite to serve at a gathering, these bruschettas have everything I love in one bite.
Crunchy garlic toast, topped with a dollop of creamy chipotle queso fresco, tangy pulled pork, dressed in barbecue sauce, and topped with a little sriracha. I think it’s the perfect snack, but between you and me, I could make a meal out of this!
Leftovers never tasted so good.

Ingredients
- olive oil
- 2 cloves garlic halved
- 1 loaf rustic Italian bread or baguette sliced into 1/2-inch slices
- The Laughing Cow Queso Fresco Chipotle Spreadable Cheese
- 1 pound pulled pork with barbecue sauce
- Sriracha and cilantro for garnish
Instructions
- Brush the slices of bread with olive oil and rub with garlic. Toast under a broiler or on a grill pan until golden.
- Spread The Laughing Cow Queso Fresco Chipotle Spreadable Cheese onto the toasted bread. Lightly dress the pulled pork with a barbecue sauce and place on top of cheese. Garnish with sriracha and cilantro. Serve immediately.
