Oh no. I’m all about cooking once, eating twice. Or trying to, at least.

If there are leftovers, packing lunches for my family is a whole lot easier. If there are leftovers, the next evening’s dinner is a whole lot easier. If there are leftovers, you can make quick, delicious bites, like these Chipotle Pulled Pork Bruschetta with Queso Fresco.

If you’re like me, having extra pulled pork is the best thing ever – the possibilities are endless! And if you’re craving a healthy snack or looking for a delicious bite to serve at a gathering, these bruschettas have everything I love in one bite. Crunchy garlic toast, topped with a dollop of creamy chipotle queso fresco, tangy pulled pork, dressed in barbecue sauce, and topped with a little sriracha. I think it’s the perfect snack, but between you and me, I could make a meal out of this!

Leftovers never tasted so good.

      I can’t help but wonder if it’s a mom thing, Brenda! Or whomever is the cook the family :) I’m guessing my kids are not as fond of leftovers as I am!

    I’m with you Liren. .  on the leftovers. .  love being strategic with leftovers . . you kinda have to during the week. And yes, leftover pulled pork is the best thing ever! heading over now to check out the recipe!
