My grandfather (Papa, to us cousins) would bring his shoes to the chair, where he would bend over and tie its thin black laces with as much care as you would truss a turkey. He would pop up with a satisfied smile on his face and stroll out the door and down the hill, turning left at the corner until my spying eyes could no longer see him from my perch at the window.
Papa would go on long walks those summers that he and my grandmother would visit us in New York, and he was always so brisk and purposeful with each step. I never knew if he had an errand to run or if he was just getting some exercise, but I did know that he never returned empty handed.
He always came back with a bulging brown paper bag, smelling of yeast and faintly of onion. Bagels!
Pumpernickel was Papa’s favorite, but he made it a point to bring back an assortment so that everyone could pick their own. I could never decide which I liked best, so I was grateful he always had so many to choose from. Some days I was all about the cinnamon raisin, but other days, I would pick poppy seed or onion. And of course, I had a special place in my heart for pumpernickel, just like Papa.
These days, I find myself opting for everything bagel — it’s perfect for indecisive bagel lovers like me. And while I have had the chance to learn the art of bagel baking back in New York, I confess that I have only made it a handful of times here in California. I have also heard that there are decent bagel places out here, but I feel like bagels are best left for when I return home for a visit. It never feels the same.
That’s where these scones come in. By now you know how much I love savory scones — they’re one of my favorite things to bake, and luckily, one of my family’s most favorite things to eat. I marry my two loves in these everything bagel scones, and it has quickly become a family favorite.
Cream cheese makes for a tender, creamy scone, flavored generously with everything bagel seasoning. Serve it up right with cream cheese and lox, and this compromise feels like it was simply meant to be.
How to Make Everything Bagel Scones
The flavors of your favorite bagel in the simplicity of a scone – it’s the best of both worlds! If you’ve ever been intimidated by the process of making homemade bagels, these Everything Bagel Scones deliver those familiar flavors with the ease of a very forgiving scone dough.
As with any good scone recipe, the key is working with ice cold ingredients. Quickly whisk together the dry ingredients: flour, sugar, everything bagel seasoning, baking powder, and salt. Cut in ice cold cream cheese into the flour mixture using a pastry cutter. You can also use a food processor or two forks.
Quickly whisk together the eggs and buttermilk and fold it into the flour mixture, just until it’s moist.
Stir in the parmesan cheese and green onion, taking care not to over mix. The dough should be fairly sticky, but if you find your dough feeling really wet, dust it lightly with a touch of flour.
Divide the dough into two balls, and roll each out into a round. Cut out four wedges from each, for a total of 8 scones. Brush the tops with buttermilk, sprinkle with sea salt and everything bagel seasoning, and chill in the freezer for 30 minutes.
This chill time is very important; it gives the dough a chance to chill the fat and relax the gluten, which results in loftier baked scones!
Gently stir the parmesan and green onion into the batter. Divide the dough into two pieces and form two balls of dough. Roll each ball of dough into two 6-inch rounds, about 3/4-inch thick. Cut out 8 wedges. Place the scones on a lined baking sheet, and lightly brush with buttermilk. Sprinkle with sea salt and remaining everything bagel seasoning.
Bake the scones until they are fluffy and golden, then enjoy while they are warm! They’re delicious on their own, but especially delicious with a schmear of cream cheese, lox, thin slices onion, and briny capers.
Chill the scones in the freezer for 30 minutes. Meanwhile, preheat the oven to 400°F with a rack placed in the center of the oven. Bake for 20 minutes, or until golden brown.. Serve warm with cream cheese, lox, red onion, and capers, or on its own.

Everything Bagel Scones
Ingredients
- 2 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 3 1/2 tablespoons everything bagel seasoning see Notes below
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
- 1/2 cup cream cheese cold, cut in cubes
- 2 large eggs
- 2/3 cup buttermilk
- 1/4 cup parmesan cheese
- 1/4 cup chopped green onion
- 2 tablespoons buttermilk
- Sea salt such as Maldon
Instructions
- In a large bowl, whisk together the flour, sugar, 1 1/2 tablespoons everything bagel seasoning, baking powder, and salt. Using a pastry cutter, cut the cream cheese into the flour mixture, until you have coarse crumbs. This can also be done with two knives or a food processor.
- In a small bowl, whisk the eggs lightly and combine with the buttermilk. Add the buttermilk mixture to the flour mixture and stir until just moist.
- Gently stir in the parmesan and green onion to the batter; the dough will be sticky.
- Dust with flour, as needed, if the dough feels too wet. Divide the dough into two pieces and form two balls of dough.
- On a lightly floured surface, roll one ball of dough into a 6-inch circle, about 3/4-inch thick. Cut out 4 wedges. Repeat with the second ball of dough. You should have 8 scones. Place the scones on a baking sheet lined with parchment or a silicone mat, and lightly brush with buttermilk. Sprinkle with sea salt and remaining everything bagel seasoning.
- Place the scones in the freezer for 30 minutes. Meanwhile, preheat the oven to 400°F with a rack placed in the center of the oven.
- Once the scones are chilled, bake for 20 minutes, or until golden. Serve warm with cream cheese, lox, red onion, and capers, or on its own.

Everything Bagel Scones FAQ/Tips
- Can I reheat the scones? The scones are best enjoyed warm but will keep, once completely cooled, in an airtight container at room temperature. To reheat, wrap in aluminum foil and place in a 350°F oven for about 10-12 minutes. You can also wrap it up up in a very slightly damp paper towel and heat in the microwave for 20-25 seconds (this is my impatient family’s method of choice).
- Can I make the scone dough in advance and bake it later? Yes! Simply form and cut the dough, and place in the freezer for 30 minutes, then transfer to an air-tight container and continue freezing until ready to bake. When ready to bake, brush with the buttermilk, sprinkle with salt and everything bagel seasoning, and add an extra minute or two to the total baking time since you will be baking from frozen.
- Where can I find Everything Bagel Seasoning? Everything Bagel Seasoning is a blend of sesame seeds with sea salt, garlic, and onion. You can find the seasoning in the spice section of your market. If you have a Trader Joe’s near you, they have a great blend.
