When the kids and I are looking to celebrate some quality mama-kid time together, one of our favorite places to go for lunch serves fizzy non-alcoholic mojitos that they adore. And I don’t blame them! What’s more festive than a bubbly drink?
We’ve tried them all, and the hands down favorite – for all of us – is their signature drink with lychee and rose. Sweet bits of fresh lychee swirl in the bubbles with a hint of fragrant rosewater – it’s the perfect drink to toast any special occasion, big or small!
Now, it happens to be Valentine’s Day today, so my thoughts naturally turn to sparkling wine and a classic mimosa. Which, by the way, has me wondering — why don’t we drink more mimosas at night? I think we need to break the mimosas are only for brunch barrier, don’t you? Anyway, I have been obsessed with making Lychee Rose Mimosas for the more grown-up celebrations!
Made with sparkling rose (because who can resist a pink drink!?) this mimosa uses sweet lychee syrup and a touch of rosewater for an elegant, toast-worthy drink! Whether you’re celebrating Valentine’s, Galentine’s, Mother’s Day, Easter, or anything at all — toast someone special with a Lychee Rose Mimosa! It’s the best way to turn an ordinary day into something special.
(Oh, and in case you were wondering about the kids — well, you should know that it works just as well with pink lemonade! For the kids, that’s worth toasting!)

Ingredients
- 1 bottle sparkling wine champagne, cava, prosecco, etc. I used sparkling rose for the color.
- 2 15-oz cans lychee in syrup strain and separate lychees from syrup
- rosewater
Instructions
- Pour 1 1/2 ounces lychee syrup and 1 ounce rosewater in a champagne coupe or flute.
- Top with sparkling wine (about 4-6 ounces, depending on size of your glass).
- Garnish with 2-3 lychees and enjoy!
