There’s something magical about the light this time of year. Golden hour seems to last all day, bouncing off the autumn colors on the leaves that linger on the branches as we enter late fall.
There’s one particular stretch of road in town that mesmerizes me especially. The broad maple leaves show off their light green to amber ombre, and the neighboring ornamental pears add their fiery red shades to the mix. It’s a sight that never gets old and reminds me of the gorgeous pears this time of year.
Beautiful D’Anjou pears are a treat, and I love to slice them up and enjoy them when they are sweet and plentiful. But they are also delicious in an elegant salad dressed in a simple vinaigrette with dollops of luscious burrata.
How to Make Pear and Burrata Salad
This pear burrata salad couldn’t be simpler. I slice the Anjou pears, skin and all, (most of the fiber and antioxidants in pears are found in their skin) and place them on a bed of spicy baby arugula with dollops of the creamiest burrata cheese. If you can’t find burrata, substitute with mozzarella! A simple vinaigrette is all you need to bring it all together to serve with dinner! ⠀

Pear and Burrata Salad
Ingredients
- 4 cups baby arugula ⠀
- 2 medium Anjou pears thinly sliced ⠀
- 8 oz burrata cheese 4 mini, gently halved
- 1/3 cup extra-virgin olive oil ⠀
- 1/4 cup red onion finely minced ⠀
- 3 tablespoons white balsamic vinegar
- 2 teaspoons stone ground mustard ⠀
- kosher salt ⠀
- freshly ground black pepper ⠀
- 1/4 cup crushed candied walnuts
Instructions
- Arrange the arugula on a serving platter. Top with the pears and burrata cheese. ⠀
- In a small bowl, whisk together the olive oil, onion, vinegar, and mustard. Season to taste with salt and pepper. ⠀
- Drizzle some dressing over the salad and garnish with candied walnuts. ⠀
- Serve immediately with additional dressing on the side.
