Our kitchen table is round, the wood showing little nicks of wear and tear from years of breakfasts, lunches, dinners and snacks, not to mention toys and textbooks and homework and projects of all kinds. It’s been well used and well loved, and even the chairs have been replaced over the years. But the table remains, and I am constantly tidying up, reminding the children to bring their toys upstairs and clear books off the table.
It’s when the table is cleared and set for dinner that I can finally relax. Knowing that we, as a family, can gather around the table for dinner is more important than my kids realize. It is the reason I won’t allow our schedules to be overrun by activities and sports, it’s the reason I always want to be home by the dinner hour.
I know how fortunate we are to know that there will be a meal, every single night. I always say a prayer of thanks that there is food on the table, whether it is a simple sandwich or an elaborate roast. With 1 in 6 Americans facing hunger today, it can be quite sobering.

Chicken and Herb Spaetzle Soup Recipe
Homemade spaetzle – have you ever tried it? My daughter fell in love with these miniature dumplings when we ate at an old German restaurant in San Francisco a couple of years ago, and she has been begging me to make it ever since. Part of her love for spaetzle is surely a bit of pride for her heritage, but the other part is the fact that it is impossible for a child to dislike a dumpling! For me, spaetzle is comfort food, and in a chicken soup, I can’t think of anything more comforting on a chilly autumn day.
Making homemade spaetzle is perhaps just as fun as eating it, and surprisingly easy. If you don’t have a spaetzle maker, do not fret. A colander works, or even a box grater with 1/4 inch holes. Part of the fun is that they don’t look perfect, even if they taste perfect.

Ingredients
- 2 1/4 cups all purpose flour
- 1 teaspoon kosher salt
- 1/4 teaspoon white pepper
- 1/8 teaspoon ground nutmeg
- 3 large eggs
- 3/4 cup whole milk
- 4 teaspoons fresh herbs e.g. thyme, parsley, etc, divided
- 1/2 tablespoon olive oil
- 3 carrots finely diced
- 2 stalks celery finely diced
- 8 cups chicken stock
- 2 bone-in chicken breasts
- 1/2 onion skin on
- kosher salt
- freshly ground black pepper
Instructions
- Make the spaetzle dough by whisking together the flour, salt, pepper and nutmeg in a large bowl. In a separate small bowl, beat the eggs with the milk until well combined. Add the egg mixture to the flour, and using a wooden spoon or spatula, gently stir together until you have a sticky dough. Stir in 3 teaspoons of the fresh herbs. Let it sit in the refrigerator while you start the soup. This can even be done the night before.
- Start the soup: In a large pot, heat olive oil over medium heat. Add the carrots and celery and cook, 2 minutes. Add the chicken stock, chicken breast and onion, bring to a boil and cook for about 20 minutes, or until the chicken is poached. Remove the onion and discard. Take the chicken out of the pot, and when it has cooled slightly, remove the bone and skin and discard. Shred the chicken and return to the soup. Season to taste with salt and pepper.
- Bring a pot of salted water to a boil. Using a spaetzle maker or colander, pass the dough through the holes and drop it into the water. The dumplings will cook quickly and float to the top. Use a slotted spoon to retrieve the spaetzle and transfer it to the soup. If you wish, you can also drop the spaetzle directly into the soup pot. Stir in the remaining teaspoon fresh herbs. Serve the soup immediately.

Family favorites that have been passed down, such as: Uncle John’s mother’s Ricotta Gnocci, or my grandfather’s corned beef sandwiches. Matzoh Ball Soup, all with homemade bread. A Roasted chicken with mashed potatoes, gravy and rolls or challah is always a special & warm meal. I’m sorry I can’t choose one. I’ve been disabled by a neck/spine injury (awaiting surgery), so have been able to cook only a few times a month during the last 2 years – My favorite thing to do for my family is to make them a nice dinner full of love. We do eat together at the table every night, which I treasure. :)

Chicken Tortilla Soup
We love to make (and eat!) tacos together.
My mom used to make “poor man cakes” for us as kids. They are steam cakes with a caramel sauce that my great grandmother fed her kids during the Great Depression. Basically flour and water, they are extremely cheap but very filling. When we fell on tougher times, these cakes were served often for dessert to ease the hollow bellies. They still mean so much to me!

I love cooking for my family and love spending time in the kitchen, however my family’s favorite meal I cook is one that takes 10 minutes to prepare and just pop in the oven for 45 minutes. It’s nice to be able to do that as well and spend time with them while dinner (almost) prepares itself! :)
Oh man, I was drooling before I even looked at the pictures– “Chicken and Herb Spaetzle Soup” just SOUNDS amazing! Of course, your pics really drove it home for me– my mouth is an ocean right now.
Enjoy cooking many items for my family but the two “winners” are Broccoli Casserole that I am “required” to bring to family cover dish gatherings. I swear if I didn’t bring it, they wouldn’t let me in. It is very easy to make but they love it…even those who really don’t like broccoli. I make it in my Pampered Chef Large Stone Casserole and take it in my Pampered Chef insullated tote (I wish they still offered those) and it is still piping hot when I get across town. The second is a new addition to my standards but it is a “keeper”. Mediteranean Chicken in my Deep Dish covered baker. Who knew you could have an amazing tasting juicy chicken dish in 30 min from the MICROWAVE? REALLY? Yep.. it is a winner EVERY TIME. I don’t always use the flat bread/pizza serving, sometimes over pasta, or with seasoned rice I even made Lettuce wraps for a outside picnic and they were a total SMASH. Something magical happens when you put the red onions, the Kalamato Olives, the sundried tomatoes and the Pampered Chef Greek Seasonings in the Deep Dish Covered Baker and top it with the Chicken… I don’t know exactly what happens under that lid but I know it is MAGIC for sure… CAUSE, I don’t really cook that well LOL
I have the amazing Deep Dish Baker earned it at my party and I love making the Incredible 30-minute Chicken for my family. We are all so busy and I can put a great, crispy yet moist chicken dinner on the table in just minutes. I have so many pampered chef products and the Rockcrok is another one I would love to have.
Cranberry Chicken means the most when feeding my family. It’s a recipe that’s been handed down through generations. My husband loves it and my daughter does too. It’s really good, doesn’t take a lot to prepare so I can feed mh family and spend time with them in the evening as a family.
My family loves my beef stroganoff. It’s one meal that everyone will eat and enjoy.

My favorite in the house is the white bean chicken chili and homemade chicken noodle soup, with fresh chicken stock.
Soup to my family means a nice warm hearty meal in your belly, it’s well balanced and brings the comfort of home.

One thing I always loved to make for my family is chicken noodle soup with homemade noodles. But seeing this recipe, I just have to try it with the spaetzle. This just may replace my old chicken soup recipe!
The meal that means the most to me and my family is my homemade chicken Noodle soup. its something all my Kids will eat. And it’s super easy to make, so the kids can help prep.
It depends — I make different dishes depending on the occasion but what warms my heart the most is cooking someones favorite dish. My children each have one they really love and when they come home for a visit theirs is the one I make. It makes each one feel special on that day!
