For someone who uses a blender multiple times a day, for some odd reason, I haven’t granted it counter-worthy status. You would think that since I’m constantly pulling it out of the cabinet over and over and over again I would just wise up and leave it on display, but it’s one of those silly things I insist on doing.
That blender has served me well, though, and I can not imagine a day without it. You know how smoothies are just part of our every day! Lately, my son has been loving pineapple smoothies every day after school, and after I make his, I’ll make myself a Piña Colada Green Smoothie. It’s my little mini vacation in the middle of the day, even if it’s missing the rum (though I won’t tell if you decide to add some!).
Piña Colada Green Smoothie
Make every day a fiesta with a Piña Colada Green Smoothie!
- 1 cup light coconut milk
- 1 cup fresh kale or spinach leaves
- 1 ripe banana
- 1 1/4 cups frozen pineapple chunks
- 1-2 tablespoons agave nectar (optional)
Place the the coconut milk, kale/spinach, banana and pineapple in a blender in this order. Sweeten with agave nectar if necessary. Blend until smooth. Enjoy immediately.
